Short answer: a burnt pan is almost never ruined. The burnt layer sits on the metal, not in it, and with soda crystals and boiling water it comes away by itself.
Short answer
Boil water with soda crystals for twenty minutes, then wipe it clean.
Pour a shallow layer of water into the pan, add a tablespoon of soda crystals and let it simmer gently for twenty minutes. The burnt layer comes away from the base and you wipe it off afterwards. Scouring is unnecessary and usually makes things worse.
Why does food burn onto a pan?
Proteins and sugars bond to the metal the moment they get too hot. That is not dirt, that is a chemical bond.
If your pan gets too hot or runs dry, the proteins and sugars in your food burn and bond to the surface. That is why scrubbing works so badly: you are trying to rub off something that is chemically stuck.
What does work is loosening that bond. Warm water on its own does it slowly. Water with soda crystals does it quickly, because soda crystals break down exactly those burnt-on residues.
Your gran's method, step by step
Waiting twenty minutes costs you less time than half an hour of scrubbing.
- Let the pan cool down. Cold water in a red hot pan can warp the base. A cast iron pan can even crack.
- Add water until the burnt layer is covered. Any more is pointless, you only need to reach the burnt layer.
- Add a tablespoon of soda crystals. Bicarbonate of soda works too, but it is milder, so expect to wait longer. For a thick layer, use two tablespoons.
- Simmer gently for twenty minutes. Keep it low, or it will boil over. You will see the layer come loose and float up.
- Let it cool and pour the water away. Whatever is left will now lift off with a wooden spatula.
- Rinse it out and buff it dry. A damp cloth takes off the last film. Drying straight away prevents water marks on stainless steel.

If some of it is still there after one round, simply repeat it. That works better than scouring harder.
Every pan is different
What is fine on stainless steel is not fine on every pan. Here is the difference.
Stainless steel. Anything goes here: soda crystals, boiling, a wooden or silicone spatula. If a dull haze is left behind, that is limescale from your tap water. A splash of vinegar takes it off, then wipe down with water.
Ceramic or non-stick. Soda crystals and boiling are fine, scouring absolutely is not. One scratch in the coating and that coating stops doing its job. No wire wool, no scouring pad, no oven cleaner.
Cast iron. Do not use soda crystals. They attack the seasoned layer of fat that you want to keep. Warm water, a wooden spatula, then dry it off and oil it lightly.
Aluminium. No soda crystals here either. Aluminium discolours and goes dull from it. Warm water with washing-up liquid, and patience.
Deep fat fryer. Take the oil out first and dispose of it separately, never down the sink. Then boil water with soda crystals as described above. The film of grease on the sides comes off with a cloth and hot water.
What you are better off avoiding
Most damage to pans happens during the cleaning, not during the cooking.
Wire wool and scouring pads. They take off the burnt layer and the coating with it. On stainless steel they scratch the surface so badly that food burns on more easily afterwards.
Oven cleaner in a pan. Far too aggressive for a non-stick coating, and you do not want the residue in your food.
Cold water in a hot pan. The difference in temperature warps the base. A warped base no longer spreads the heat evenly, and then food burns on more often instead.
The dishwasher for non-stick. The salt and the high temperature leave the coating dull and porous.
Soda crystals and vinegar together: why it fizzes and does nothing else
The foam is impressive. That is exactly the moment they cancel each other out.
You see it everywhere: soda crystals in the pan, a splash of vinegar on top, and then the volcano. What you are watching is the two of them eating each other. What is left in your pan afterwards is mostly water, a little salt and carbon dioxide fizzing away.
And that gets rid of precisely what you needed. Soda crystals work because they break down burnt-on protein. Vinegar works because it is acidic and dissolves limescale. Mix them and you are left with neither.
So use them one after the other, and for different jobs. Soda crystals and boiling first, against the burnt-on layer. If a dull white haze is left behind after that, it is limescale from your tap water, and a splash of vinegar is what you reach for.
Black on the outside, how do you get that off?
That black layer is grease burnt on over years of cooking. Boiling out does not help there, because water cannot reach it.
Make a paste of soda crystals with a little water, until it is about the thickness of toothpaste. Spread it over the black patches, including the rim around the base, because that is usually where it is thickest.
Leave it for an hour. The soda crystals need that long to work through the layer of grease. Then wipe it off with a damp cloth. On stainless steel you can bring in a non-scratch sponge, on a non-stick pan use a cloth only.
If it has been there for years, expect two or three goes. That is no failing of the method, it is simply a thick layer.
Why it keeps happening
If something burns on every week, your cooking is usually not to blame.
Three things are almost always the cause. The heat is too high, so the protein burns before it can cook through. The pan is not up to temperature when the food goes in, so it sticks straight away. Or the non-stick coating is worn out.
That last one is the awkward one. A non-stick coating is a thin layer on the metal and it wears. If you see scratches, patches where the colour is different, or food burning on in exactly the same spot, the coating has had it. That is where cleaning stops and replacing begins.
And what if it really has had it?
A pan with a damaged non-stick coating will never come good again. That is the point at which the question shifts to what you buy instead. Most non-stick coatings are made with PFAS, and that is exactly what the debate is about.

Can I use vinegar instead of soda crystals?
For limescale yes, for burnt-on food no. Vinegar is an acid and dissolves minerals, so it works nicely on that dull white haze on stainless steel. Burnt-on protein calls for the opposite: soda crystals are what break it down. So use them for different problems, and never at the same time.
What is the difference between soda crystals and bicarbonate of soda?
They are two different substances. Soda crystals are sodium carbonate and the fiercer of the two, which is why they break down burnt-on food quickly. Bicarbonate of soda is sodium bicarbonate, also sold as baking soda, and it is a good deal milder. It does work, but you have to wait longer. For a thick black layer, reach for soda crystals.
How much soda should I use?
A tablespoon of soda crystals in a layer of water two to three centimetres deep is enough. For a thick black layer you can make it two tablespoons. More does not work faster, leaving it longer does.
Does this work on a baking tray or a griddle pan?
Yes, with the same method. With a ribbed griddle pan, leave the water a little longer, because the burnt-on layer is at its most stubborn between the ribs. A wooden spatula follows the ribbing without damaging the surface.
Is a burnt pan still safe to cook in?
With stainless steel and cast iron yes, as soon as it is clean again. With a non-stick pan that has visible scratches or a flaking coating I would not do it. That coating belongs on your pan and not in your food.
